I love zucchini season! In fact, I plant a simple garden every summer so I can get loads of zucchini (and ingredients for homemade salsa).

Zucchini is a fantastic vegetable to use for baked goods…but also for savory dishes. Some of my all-time favorite dinners involve zucchini, like that zucchini spaghetti casserole and Tex-Mex zucchini skillet.

But if I’m being completely transparent, my most-loved zucchini recipe of all time is that chocolate zucchini cake. AMAZING.
